2 ounces Cajun Vodka/Gin, chill;see directions
splash White Vermouth
olives or lemon twist
Directions:
1. Before you make your Cajun Martini you need to prepare your CAJUN VODKA/GIN. Put 4 to 5 jalapenos, seeded and sliced, into a bottle of Gin or Vodka and marinate in the refrigerator for 48 hours before serving. After one week, if not used, this should be strained. Jalapeno peppers can vary in their heat. You should always use gloves when handling the peppers, and be sure not to touch yourself with the pepper juice as it will sting. 2. CAJUN MARTINI: Put Vermouth into chilled glass, swirl and discard. Pour Vodka/Gin over lots of ice into cocktail shaker and immediately strain into required glass; either on the rocks in a rock glass or straight-up in a chilled martini glass. Garnish as desired, and drink while still cold.
The warmth of the spice is a very different and exciting touch for an seasoned martini drinker!
Cajun Martini Recipe
6 parts pepper vodka
1 dash of dry vermouth
Olive stuffed with pickled jalapeño pepper
Combine liquid ingredients in a cocktail shaker with cracked ice and shake well. Strain into a chilled cocktail glass and garnish with olive.
Ingredients
1 fresh jalapeno pepper
1 pint vodka
1/2 cup jalapeno peppar vodka
1 1/2 tablespoons dry vermouth
4 ice cubes
2 slices fresh jalapeno peppers (for garnish)
Directions
1First, make the jalapeno vodka: cut the whole pepper lengthwise in half, then crosswise into 1/4-inch-thick slices. Drop pepper slices and seeds into vodka bottle and replace cap. Let stand at least 1 hour, but flavor will be strongest after 6 hours. Keep refrigerate, if desired, for future use.
2Once jalapeno vodka is ready, place 1/2 cup jalapeno vodka and remaining ingredients (except for garnish) in pitcher or cocktail shaker. Stir or shake gently, then strain into 2 martini glasses. Garnish with sliced jalapeno.

Directions:
Add jalapeno to gin bottle, fill gin bottle up to lip with vermouth. Refrigerate 8 to 16 hours (but no longer). Strain through a double layer of cheesecloth in a funnel into a clean bottle. Pour into chilled glass. Garnish with pickled green tomato.
