Here's something that is a little different - not really what you would call a BBQ dish but if you alter it a little - maybe use some left-over, shredded brisket or pulled pulled pork, with some red bell peppers, sweet onion and maybe some jalapeno for the fillings, and top it off with some cheese and left over Chili Con Carne or Green Chili from the other night, or maybe just some zesty mango salsa, it might be pretty good!

This works great !!! Good for when all your family is together. The best part is that no one has to wait for their special omelette!!!
Have everyone write their name on a quart-size Ziploc freezer bag with permanent marker. Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them. Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc. Each person adds prepared ingredients of their choice to their bag & shakes. Make sure to get the air out of the bag & zip it up. Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water. Open the bags & the omelet will roll out easily. Be prepared for everyone to be amazed. Nice to serve with fresh fruit, coffee cake, etc. Everyone gets involved in the process & a it's a great conversation piece. Just 13 minutes & you've got a nice omelette for a quick breakfast!!!
Throw it all together the night before and have it ready to toss the bag in the water in the morning...mighty easy. Could come in handy on the "morning after" if one had too many boat drinks the night before.
